 Learn to Cook Mexican Food
One of the most established traditions is the Rosca de Reyes. Each 6th of January Mexican families gather around this ring of sweet bread, to share and enjoy it along a good hot chocolate. Each one of the guests cut a piece of bread, and whoever finds "el muñequito" will be the one responsible for placing the figure of baby Jesus in the Nativity scene.
Also, on February 2, Day of the Candelaria, must submit to the child properly dressed to the church for blessing, afterwards, there is a meal of tamales atole.
This bread is elaborate with wheat flour, yeast, eggs, sugar, salt, water of orange blossom and butter, is decorated with crystallized fruits such as fig, citron, sugar and in the dough is hidden figures of baby Jesus (1 up to 6 depending on the size of the bread).
Ingredients for the yeast base:
- 60 grams of fresh yeast.
- 500 milliliters of milk or warm water.
- 1 kilogram of flour.
Ingredients for the dough:
- 600 grams of granulated sugar.
- 14 eggs.
- 15 grams of salt.
- 2 kilograms of flour
- 1 orange Grating
- 1 kilogram butter
- Ground cinnamon to taste
- Fruits as fig and citron to taste.
- 6 figure of baby Jesus (depending on the size of the bread).
- 5 eggs
Preparation:
Beat together the butter, the salt, and the sugar. When creamy, add eggs one by one. Next add the flour and the previously prepared yeast base, and the orange grating. Beat for 10 minutes until the dough is no longer sticky.
Set aside for 2 hours. Form the dough into a ring. From the underneath, hide the muñequitos wherever you like within the dough. Garnish with citron and crystallized fruits to taste.
Brush with egg, and if is desired, dust with sugar. It is baked to 180 degrees centigrade, for 15 to 20 minutes.
